Yummy of the Week - Tomato Vodka Sauce

While searching for a good pasta sauce, I came across this fantastic sauce. Vinnie and I both really enjoyed this recipe. It is spicy, so omit the red pepper flakes to reduce the spiciness. I would have included a picture, but by the time i thought of it, we had finished it all!
Ingredients (serving size - 4)
2 tablespoon butter
2 tablespoon olive oil
1 large cooked chicken breast (cut into bit sized pieces)
1 onion, chopped
2 to 3 tablespoons garlic
1 (28 ounce) can canned tomatoes crushed
1 cup heavy whipping cream
1/3 cup vodka
1/4 teaspoon crushed red pepper flakes (if you like your sauce spicy add more)
salt and pepper to taste
1 pound penne pasta
2 tablespoons grated Parmesan cheese

Directions
In a skillet over medium heat, melt better with oil; add onion & garlic and saute for 8 minutes or until transparent. Add tomatoes and cook for 25 minutes; stir frequently. Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook for 8 to 10 minutes or until al dente; drain and transfer to a large bowl. Increase sauce heat and add cream, vodka, red pepper flakes, and chicken; boil for 2 to 3 minutes. Season to taste with salt and pepper. Pour Sauce over pasta; toss to coat (you will have left over sauce). Sprinkle with Parmesan cheese; serve.
